What is Raw Honey?

Raw Honey is a true gift from nature. It's taken straight from the cells of honeycombs and only goes through a basic filtering process to remove physical impurities. This minimal processing helps preserve its natural benefits, unlike processed honey, which is heated and finely filtered, losing many valuable nutrients like pollen, enzymes, and propolis.

Many commercial honeys are produced from bees fed on sugar syrups, not only speeding up production but also diminishing the honey's nutritional value. Plus, these commercial honeys might contain antibiotics and non-organic substances from hive maintenance, along with unwanted additives.

In contrast, raw honey is a powerhouse of health benefits. It's packed with antibacterial, antioxidant, and antifungal properties. Imagine this: raw honey contains 22 amino acids, 27 minerals including Iron, Zinc, and Potassium, and over 5,000 enzymes. Plus, it's rich in vitamins like B6, Thiamin, and Riboflavin. The nutraceuticals in raw honey are fantastic for neutralising harmful free radicals. It’s rare to find a food as nutrient-dense and beneficial as raw honey!

What is the best way to consume my raw kitchen honey

Raw Honey can be used anyway you like. It is especially good as a sugar substitute to put in your tea (be sure to let the tea cool slightly so as not to compromise the honey's benefits), porridge, on toast or in yoghurt. The simplest and most beneficial way however, is to put a spoonful into a glass of warm water along with some lemon and ginger first thing in the morning and drink it on an empty stomach.

Why does raw honey crystallise?

Crystallisation in raw honey is a natural process and not a sign of spoilage or tampering. Over time, raw honey's natural tendency is to crystallise, affecting only its colour and texture. While crystallised honey turns lighter than its liquid form, darker varieties maintain a brownish hue.

The speed of crystallisation varies among honeys, largely due to their sugar content. Honey typically contains over 70% sugars and less than 20% water, making it an over-saturated sugar solution prone to crystallisation. The main sugars in honey, fructose and glucose, play a key role in this process. Glucose crystallises due to its lower solubility, while the more soluble fructose remains fluid. The ratio of these sugars in honey dictates the speed and texture of crystallisation.

To prevent or reverse crystallisation, simply keep your honey jar in a warm spot. If it has crystallised, placing the jar in warm water will dissolve the crystals and return it to its liquid state.

How should i store my Raw Kitchen Raw Honey

Keep The Raw Kitchen's raw honey at room temperature, ideally between 20-25°C. Raw honey, rich in natural sugars, doesn't need preservatives and can last almost forever if stored right.

Avoid two big no-no's: high heat and moisture. To keep your honey happy:

Use an airtight glass jar. Make sure the lid is tight to keep the quality top-notch.

Honey hates water, so keep it dry. If the jar gets sticky, just wipe the rim and threads with a slightly damp cloth for a good seal.

Always use a clean, dry spoon for serving – preferably non-metal.

Sunlight's not honey's friend. Store it in a kitchen cabinet or pantry, away from direct light.

That's it! Simple steps to ensure your raw honey stays perfect.
